Indonesian Jamu Tonic

INGREDIENTS

• 1/3 C Fresh Turmeric root,
• 3cm Fresh Ginger root, roughly chopped
• 2cm Fresh galangal root slices (optional, adds sweetness)
• 1L Filtered Water
• 2 Tbsp raw Local Honey
• Juice of 1 lime

METHOD

1. Gently wash & peel the turmeric & ginger, then roughly chop into small pieces
* (NOTE: turmeric stains so wear some gloves!)
2. In a blender or ‘bullet’, combine the turmeric, ginger and 1 cup of water & blend on high speed until it is all combined (bright thick cordial)
3. Pour the mix into a pot & add remaining water & (optional) galangal slices.
4. Gently simmer for 20 minutes (ensure it doesn't overflow from your pot)
5. Turn off heat, stir through honey and allow to cool
6. Once cooled add lemon juice
7. Using a straining sheet, or muslin cloth strain the mixture into a glass container
8. Store in the fridge for up to 1 week
